CHOQUINHOS EM POLME / BATTERED CUTLEFISH



Hoje temos uma receita de choquinhos fritos em polme. Escolha choquinhos pequenos, tenros e de preferência já amanhados.
Se optar por congelados, deixe-os descongelar previamente.
Ingredientes (4 pessoas):
- 1kg de chocos pequenos;
- 2 piri-piri* pequenos;
- 2 limões;
- 4 dentes de alho;
- Sal;
- Óleo para fritar;
- 1 ovo;
- 3 a 4 colheres de sopa de farinha de milho;
Tempere os choquinhos com o sumo de um limão, os piri-piris desfeitos, os alhos esmagados em pequenos bocadinhos e sal. Para o limão dar mais sumo, coloque-o 5 a 10 segundos no micro-ondas antes de cortar. Deixe os chocos descansar na marinada, pelo menos 1 hora.
Prepare o polme com o ovo, a farinha e 2 colheres de sopa da marinada. Mexa e verifique a consistência: deve escorrer, mas cobrir os choquinhos. Se necessário, acrescente mais liquido da marinada ou farinha, consoante o caso. Se achar que os choquinhos podem ficar rijos, ferva-os durante 10 minutos na própria marinada e um copo de água antes de os passar pelo polme.
Aqueça o óleo a 180.º C. Retire os choquinhos da marinada, passe-os pelo polme e leve-os a fritar cerca de 4 minutos (2 de cada lado).
Escorra  em papel absorvente. Sirva com salada e limão.
* Piri piri são os frutos mais pequenos da pimenta-malagueta. Normalmente, são usados secos.

Stir and check the consistency: should drain, but cover the cuttlefish. If necessary, add more liquid from the marinade or flour, as appropriate. If you think the cuttlefish can be tough, boil them for 10 minutes in the marinade itself and a glass of water before going through the batter.
Heat oil to 180. º C. Remove the marinated cuttlefish, battered by pass them and take them to fry about 4 minutes (2 on each side).

Drain on paper towels. Serve with salad and lemon.

DOCE DE ABÓBORA E MAÇÃ COM ESPECIARIAS/PUMPKIN-APPLE JAM WITH SPICES

E cá está o resto da abóbora, desta vez acompanhada com maçã e com especiarias cheirosas, a lembrar uma mistura de Outono com Natal... E utilizando um ditado português: Ainda sabe melhor do que aquilo que cheira!
Ingredientes:
- 800 g de abóbora;
- 400 g de maçã;
- 850 g de açucar;
- 2 paus de canela;
- 2 cravinhos;
- 1 estrela de aniz;
Descasque a abóbora e corte em pequenos cubos. Nas maçãs, usei maçãs vermelhas mas pode ser qualquer outra variedade (reinetas, verdes, bravo de esmolfe...). Descasque as maçãs, retire-lhes as sementes e corte-as em pedaços.
Numa panela, coloque a abóbora e as maçãs cortadas, misture o açucar e ponha a cozer em lume (fogo) brando.
A abóbora tem naturalmente muito liquido, portanto não precisa de juntar água à cozedura. Poderá até aumentar a intensidade do lume (fogo) quando verificar que já existe liquido no fundo da panela.
Quando a abóbora e a maçã estiverem cozidas, retire as especiarias e use a varinha mágica (mixer) para transformar tudo num creme. Deixe ferver novamente, baixe o lume (fogo) e coza entre 20 minutos a meia hora.
Entretanto, prepare os frascos onde vai colocar o doce, fervendo-os (e às tampas de metal) numa panela com água por 2 minutos.


 
Quando o doce estiver pronto, coloque-os de imediato nos frascos, - deixando uma margem de 1 a 2 cm da borda -, e feche bem. Desta forma, o doce arrefece nos frascos fechados e deverá conseguir criar o vácuo necessário à sua conservação por mais tempo.Para outras quantidades de doce, o ratio utilizado de quantidades é o seguinte: a maçã deverá ser metade da abóbora; por cada 100 g de fruta/vegetal, são 70g de açucar.

Ingredients:

- 400 g of apple;

The pumpkin has naturally much liquid, so no need to add water to boiling. You can even increase the heat intensity when there is already liquid at the bottom of the pan.
When the pumpkin and apples are cooked, remove the spices and use the mixer to turn everything into a cream. Bring to a boil again, lower the heat and cook from 20 minutes to half an hour.



Meanwhile, prepare the jars where you will put the jam, boiling them (and metal lids) in a pan of water for 2 minutes.
When the jam is ready, place it immediately in jars - leaving a margin of 1 to 2 cm (1 inch) from the edge - and close tightly. Thus, the jam cools in closed jars what should be able to create the vacuum necessary for its  longer conservation.
For other amounts of jam, the ratio are as follows: apple should be half the amount of Pumpkin; per 100 g of fruit/vegetables are 70g of sugar.

TARTE DE ABÓBORA (MERENGADA) / PUMPKIN PIE (with MERINGUE)

Conforme prometi, cá está a 2.ª receita da semana com a abóbora como grande protagonista. Esta tarte fez tanto sucesso no primeiro jantar de Halloween há uns anos, que se tem mantido como "sobremesa permanente"... sempre com o mesmo sucesso!! Espero que gostem.
Eu fiz a massa da tarte, mas pode usar massa quebrada pré comprada. Também pode merengar ou não, conforme os gostos dos presentes.
Ingredientes da massa: - 225 g farinha; - 110 g manteiga mole; -1 ovo; - 3 colheres água gelada.
Ingredientes Recheio: - 200 g de abóbora crua, descascada e ralada grosso; - 2 ou 3 colheres de sopa de doce de abóbora; - 1 colher de chá de canela; - 3 colheres de sopa de açucar amarelo; - manteiga;
Ingredientes merengue: - 2 claras de ovo; - 2 colheres de sopa de açucar amarelo.
Prepare a massa da tarte: No processador de alimentos (food processor) junte a farinha com a manteiga. Carregue no botão "pulse" 5 vezes por 5 segundos. Junte o ovo e a água e bata até começar a integrar-se. Retire a massa da máquina, envolva com as mãos e faça uma bola. Embrulhe em papel aderente e coloque no frigorifico por 30 minutos a 1 hora.
Enquanto a massa está no frigorifico, rale a abóbora e misture-a com a canela e 2 colheres de sopa de açucar. Pré aqueça o forno a 180.º C.
Unte uma tarteira com manteiga e forre com papel vegetal antes de estender a massa. Coloque o doce no fundo e com uma pincel ou costas de uma colher, espalhe-o por toda a superficie da massa. Eu usei o resto de doce de abóbora com laranja e gengibre e irei publicar uma receita de doce de abóbora e maçã com especiarias, mas pode usar outro doce.
Por cima espalhe a abóbora ralada, misturada com o açucar e a canela. Leve ao forno pré-aquecido e baixe a temperatura para 160.ºC. Deixe cozer cerca de 50 minutos a 1 hora.
Para merengar, bata as claras de ovo em castelo e junte 2 colheres de açucar amarelo. Sem desligar o forno, retire a tarte aos 45 minutos e coloque as claras por cima. Leve novamente ao forno por mais 15 a 20 minutos.

Remove the dough from the machine, wrap with your hands and make a ball. Wrap in adherent and put in the refrigerator for 30 minutes to 1 hour.
While the dough is in the fridge, grate the pumpkin and mix it with cinnamon and 2 tablespoons sugar. Preheat the oven to 180. º C.
Grease a pie tin with butter and line with parchment paper before extending the dough. Place the jam at the bottom and with a brush or back of a spoon, spread it on the entire surface of the dough. I used the rest of 
pumpkin-orange jam with ginger and I'll post a recipe of pumpkin-apple jam with spices, but you can use other jam.
Sprinkle over the grated pumpkin, mixed with sugar and cinnamon. Take to preheated oven and lower the temperature to 160. º C. Bake 50 minutes to 1 hour.
To meringue, beat the egg whites until stiff and add 2 tablespoons of brown sugar. Without turning off the oven, remove the pie at 45 minutes and put the stiff whites on top. Put back in the oven for 15 to 20 minutes.

GRATINADO DE ABÓBORA E BATATA DOCE / PUMPKIN AND SWEET POTATOE GRATIN

A abóbora que comprei para o jantar de Halloween era enorme e serviu para este gratinado, uma tarte doce e ainda sobrou metade com a qual fiz uns frasquinhos de doce.
Portanto, para compensar a minha falta da semana passada, esta semana teremos 3 receitas com abóbora....
Ingredientes (4 pessoas)
- 400 g de abóbora descascada;
- 2 a 3 batatas doces grandes;
- 4 colheres de sopa de azeite;
- 2 cebolas médias picadas grosseiramente;
- 1 colher de sopa de margarina/manteiga;
- 4 ovos;
- 200 ml de natas (creme de leite);
- 100 g de queijo parmesão e gruyere ralados grosso;
- Sal, pimenta e noz moscada;
Lave bem as batatas com a casca. Algumas batatas doces têm formatos esquisitos e vai ser mais fácil descascá-las desta forma. Numa panela com água e sal, coloque as batatas e a abóbora e deixe ferver cerca de 10 minutos. Escorra e reserve.
Tire a pele às batatas. Corte a abóbora e as batatas em cubos pequenos. Pré-aqueça o forno a 180.º C.
Na panela, aqueça o azeite e refogue a cebola até ficar loirinha com uma pitada de sal. Junte os cubos de abóbora e a batata-doce e deixe refogar cerca de 10 minutos. A meio, coloque um pouco de pimenta. Vá mexendo, para não pegar. Verifique e retifique os temperos.
Coloque o refogado de batata doce e abóbora num recipiente de ir ao forno untado com manteiga. Bata os ovos com a noz moscada, as nata e metade do queijo, uma pitada de sal e pimenta e despeje por cima. Deixe que se introduza na mistura e polvilhe com o resto do queijo. Leve ao forno cerca de 30 minutos.

 - 400 g of peeled pumpkin;

 - 4 tablespoons of olive oil;

 - 4 eggs;
 - 200 ml cream;
 - 100 g of grated parmesan and gruyere;
- Salt, pepper and nutmeg;
Wash the potatoes with the skin. Some sweet potatoes have odd shapes and will be easier to peel them this way. In a saucepan with water and salt, place the potatoes and pumpkin and simmer about 10 minutes. Drain and set aside.
Remove the skin of potatoes. Cut the pumpkin and potatoes into small cubes. Preheat oven to 180.º C.
In saucepan, heat olive oil and saute onion until golden with a pinch of salt. Add the diced pumpkin and sweet potato and cook about 10 minutes. Halfway through, add a little peppe and stirr. Check and rectify the seasoning.
Place the sautéed sweet potato and pumpkin in a greased baking container. Beat eggs with nutmeg, cream and half the cheese, a pinch of salt and pepper and pour over the mixture. Sprinkle with remaining cheese. Bake in preheated oven 30 minutes.

MOZZARELLA PANADA / BREADED MOZZARELLA

Estas bolinhas de mozzarella são uma óptima entrada: crocantes por fora, a derreterem-se por dentro... Uma delícia! E se juntar umas especiarias ao pão ralado ficam ainda melhores.
Além disso, são rápidas de fazer e no halloween, com uns aperitivos triangulares a fazer de asas, deram uns lindos morcegos :).
Desta vez encontrei uma embalagem já com bolinhas de mozzarella pequenas no supermercado (Continente). Mas, se não conseguir encontrar, basta cortar o queijo normal em cubos ou outro formato.
Ingredientes:
- Queijo mozzarella;
- Ovo;
- Farinha;
- Pão ralado;
- 1 colher chá cheia de Ervas de provence (mistura de rosmaninho, segurelha, tomilho, oregãos, manjericão e mangerona);
- Óleo para fritar;
Corte o queijo mozzarella e ponha no congelador por cerca de 20 a 30 minutos. Coloque um recipiente com a farinha; outro com o ovo batido com as ervas; e um terceiro com o pão ralado.
Aqueça o óleo a 170.º C. Passe a mozzarella congelada pela farinha, o ovo e o pão ralado, por esta ordem e leve a fritar cerca de 2 a 3 minutos, até ficarem douradinhas.

HALLOWEEN 2012

Ontem tivemos o jantar de Halloween, de acordo com a ementa que já estava decidida.  As múmias, - muito giras e fáceis de fazer -, foram um sucesso e já têm a receita no blog. As restantes receitas vão ser publicadas aqui no blog em breve. De qualquer forma, aqui vão algumas fotos da comida para abrir o apetite!!....
