BOLO VELUDO VERMELHO COM CEREJAS E FRAMBOESAS / RED VELVET CAKE WITH CHERRIES AND RASPBERRIES

A Ana Margarida Abreu do blog Tachos versus Panelas lançou o desafio mensal da blogagem das cores. Este mês era o vermelho, portanto lembrei-me de fazer um red velvet cake e encontrei uma receita de que gostei no site joyofbaking. Para ser diferente do tradicional, resolvi que o recheio seria de frutos vermelhos em vinho do Porto.... Espero que gostem!!
Ingredientes (forma 22 cm):
- 2 1/2 chávenas/xícaras de farinha;
1/2 colher de chá de sal;
2 colheres de sopa de cacau em pó;
1/2 chávena/ xícara de manteiga sem sal;
1 1/2 chávenas/xícaras de açúcar; 
- 2 ovos grandes;
- 1 colher de chá de extrato de baunilha
1 chávena/xícara de leitelho (eu usei leite magro);
2 colheres de sopa de corante alimentar líquido vermelho;
1 colher de chá de vinagre de sidra;
15 g fermento ou 1 colher de chá de bicarbonato de sódio;
Recheio:
- 100 g de framboesas congeladas;
- 100 g de cerejas descaroçadas e partidas ao meio;
- 1/2 chávena de açucar amarelo;
- 1/2 chávena de vinho do Porto;
Pré-aqueça o forno a 170.º C. Unte uma forma de bolo com manteiga e forre o fundo com papel vegetal.
Numa taça, misture a farinha com o sal e o cacau. Noutra taça misture o leitelho (eu usei leite magro) com o corante alimentar.
Bata a manteiga à temperatura ambiente com o açucar durante cerca de 3 minutos. Junte os ovos e bata bem. Acrescente o extracto de baunilha e bata até ficar tudo misturado.
Alternadamente e aos poucos, vá juntando a mistura da farinha e a mistura do leitelho até estar tudo incorporado.
Combine o vinagre com a soda/fermento e adicione à mistura, batendo bem.
Coloque a mistura na forma e leve ao forno cerca de 25-30 minutos. Para verificar a cozedura, espete o bolo com um palito: se sair limpo, está pronto.
Desenforme o bolo e deixe-o arrefecer bem. Se depois de frio o colocar no frigorifico cerca de 1 hora, fica mais consistente.
Para o recheio, coloque os ingredientes numa panela e leve a lume brando até levantar fervura. Deixe ferver cerca de 10 minutos, mexendo sempre. Deixe arrefecer um pouco.
Com uma faca ou instrumento próprio, divida o bolo em duas metades horizontalmente. Coloque a mistura de frutos na parte de baixo e volte a colocar o topo por cima, de forma a rechear o bolo.

To be different from the traditional, I decided that the filling would be of red fruits in port wine .... Hope you enjoy!
Ingredients (22cm/9in round tin):
- 2 1/2 cups sifted cake flour;
- 1/2 teaspoon salt;
- 2 tablespoons cocoa powder;
- 1/2 cup unsalted butter, at room temperature;
- 1 1/2 cups white sugar;
- 2 large eggs;
- 1 teaspoon pure vanilla extract;
- 1 cup buttermilk;
- 2 tablespoons liquid red food coloring;
- 1 teaspoon white distilled vinegar;
- 1 teaspoon baking soda;
Filling:
- 100 g frozen raspberries;
- 100 g of cherries pitted and cut in half;
- 1/2 cup brown sugar;
- 1/2 cup of port wine;

Preheat oven to 170. ° C. Grease a cake pan with butter and line the bottom with parchment paper.
In a bowl, sift together the flour, salt and cocoa. In another bowl whisk the buttermilk with food coloring.
Beat the butter with sugar for approximately 3 minutes, until soft. Add eggs and beat well. Add the vanilla extract and beat until combined.
Alternately and gradually go adding the flour mixture and buttermilk mixture until all is incorporated. 
Combine the vinegar with soda / baking powder and add to mixture, beating well.
Put the mixture into the tin and bake about 25-30 minutes. To check the cooking, insert a toothpick in he center of the cake: if comes out clean, it's ready.
Unmold the cake and let it cool. After it's cold place in a refrigerator for about 1 hour (it helps to fill and frost).
For the filling, place the ingredients in a saucepan and bring to a simmer until it boils. Simmer about 10 minutes, stirring constantly. Let cool slightly.
With a knife, divide the cake in half horizontally. Pour the mixture of fruit at the bottom and replace  the top in order to fill the cake.
