SANGRIA BRANCA / WHITE WINE AND FRUIT COCKTAIL

Hoje é noite de Sto. António em Lisboa: noite de festa, marchas populares, arraiais, sangria, sardinhas, entremeada, chouriço, bom pão, caracois e outras coisas boas...
Portanto, mesmo em casa, escapei-me aos antibióticos e fiz umas coisinhas tipicas do dia, nomeadamente sangria, bebida típica portuguesa. A minha é atipica, porque usei frutas que normalmente não entram na composição. Mas já provei e achei boa!!!
Ingredientes:
- 3 laranjas, 1 limão, 2 maçãs, 2 pessegos de roer (usei damascos), bagos de uva, cerejas, fruta fresca a gosto;
- açucar amarelo (a gosto);
- 1 litro de vinho branco sêco de boa qualidade;
- 1 cálice de licor de fruta;
- 2 cálices de vodka, gin ou rum (opcional);
- 7up ou outro refrigerante idêntico;
- hortelã pimenta ou hortelã-chocolate;
Num jarro com cerca de 2 litros de capacidade, colocar fatias finas ou pequenos pedaços de 1 1/2 maçã, 1 1/2 pêssego. Tape-as com açucar amarelo e acrescente o cálice de licor de fruta e o rum, gin ou vodka. Com uma colher de pau, esmague a fruta misturando-a com o liquido e o açucar, transformando tudo numa papa.
Esprema 2 1/2 laranjas e o limão e ponha o sumo no jarro. Junte o vinho e mexa bem. Coloque a restante fruta (1/2 laranja, 1/2 pessego, 1/2 maçã, uvas, cerejas), cortada fina ou inteira, consoante o tamanho.
Por fim, acrescente o refrigerante, numa proporção de 1/4 do liquido existente no jarro e junte umas folhinhas de hortelã. Mexa, prove para verificar o sabor, nomeadamente se necessita de mais refrigerante e/ou açucar.
Leve ao frigorifico cerca de 1 hora e sirva bem frio. Enfeite com hortelã e fruta.

In a jar with about 2 liters of capacity, put small thin slices or pieces of 1 1/2 apple, 1 1/2 peaches. Cover them with brown sugar and add the cup of fruit liqueur and rum, gin or vodka. With a wooden spoon, crush the fruit mixing it with the liquid and the sugar, turning everything a pope. Squeeze 2 1/2 orange and lemon and put the juice in the jar. Add the white wine and stir well. Place the remaining fruit (1/2 orange 1/2 peach, 1/2 apple, grapes, cherries) or thinly sliced ​​whole, depending on the size. Finally, add the refrigerant in a ratio of 1/4 of the liquid in the kettle and add mint. Stir, taste to check the flavor, especially if you need more soda and / or sugar. Take to refrigerator about 1 hour and serve it cold. Garnish with mint and fruit.

GOMAS DE FRUTA / FRUIT GUMS

O pequeno está quase a fazer anos... E lembrei-me que a Mariana (marianareceitas paraafelicidade.blogspot.pt) e a Nancy (geografiadossabores.wordpress.com) tinham publicado umas receitas de gomas nos respectivos blogs. Ora festa que se preze tem de ter gomas :) e hoje estivemos os dois a fazer um teste a 3 sabores: morango, laranja e ananás....
Ingredientes:
-1 pacote gelatina (85 g) do gosto pretendido;
- 200 g de água;
- 5 folhas de gelatina neutra;

Misture todos os ingredientes num tacho até estarem dissolvidos.
Leve a lume brando durante 5 minutos.
Coloque em formas de silicone molhadas e leve ao frigorífico até endurecer.

And party worth its salt must have gums :)! So today the two of us made a recipe test of three flavors: strawberry, orange and pineapple ....
Ingredients:-1 pack gelatin (85 g) of the desired taste;
- 200 g of water;
- 5 sheets of neutral gelatin;

Mix all ingredients in a saucepan until they are dissolved.
Bring to a simmer for 5 minutes.
Place in forms of silicon wet and take to the refrigerator until set.

PERAS MERENGADAS / MERINGUE PEARS

Ontem levei o pequeno à Feira do Livro. Ele já tinha ido no ano anterior mas não se recordava que era tão grande e estava maravilhado com tantos livros. Para casa vieram vários livros, um dos quais de culinária. Infelizmente, o rapaz chegou a casa cheio de febre. Para comemorar as recentes melhoras e inaugurar o livro "Tesouro das Cozinheiras", adaptei a receita de merengue de peras. Espero que gostem!
Ingredientes:
- 4 peras rochas;
- 1 banana;
- 3 claras de ovo;
- 75 g de açucar;
- 2 estrelas de anis;
- 1 pau de canela;
- 200 ml de água;
Descasque as peras, tire as pevides e corte em pedaços pequenos para dentro de um tacho com a água, o anis e o pau de canela. Ponha ao lume e deixe cozer. Quando estiverem a meio da cozedura, junte a banana descascada e às rodelas. Deixe cozer mais 10-15 minutos.
Retire o anis e o pau de canela e triture a fruta com a varinha mágica. Eu não coloquei açucar na fruta, mas juntei um pouco de  canela em pó quando triturei. Deve verificar se a fruta triturada necessita de açucar e/ou canela e juntar a gosto.
Junte as claras e o açucar numa panela, leve a lume muito brando, mexendo sempre, até o açucar se diluir. Apague o lume, coloque a mistura numa taça e bata as claras até subirem e ficarem em castelo/merengue.
Ponha a fruta numa tarteira de loiça ou pirex que possa ir ao forno e por cima o merengue. Leve a forno médio (160.º C) até dourar. Sirva frio ou morno.

We brought home several books, one of which of cooking. Unfortunately, the boy came home full of fever. To celebrate that he is now better and open the book "Treasury of Cooks", I adapted the recipe for meringue pears. Hope you enjoy!

Ingredients:- 4 pears (Rocha Pears);
- A banana;
 - 3 egg whites;
- 75 g of sugar;
- 2 star anise;
- 1 cinnamon stick;
- 200 ml of water;
 Peel the pears, remove the seeds and cut into small pieces into a pot with water, anise and cinnamon stick. Put on the stove and cook. When you are halfway through cooking, add the peeled and sliced ​​banana. Bake 10-15 minutes longer.
Remove the anise and cinnamon stick and mash the fruit with the blender. I did not put sugar in fruit, but joined a little powder cinnamon. Verify whether fruit crushed needs sugar and/or cinnamon and add to taste.
Add the egg whites and sugar in a saucepan, bring to light very low heat, stirring constantly, until the sugar is diluted. Turn off the heat, add the mixture to a bowl and beat until whites stand in peaks rise and merengue.
Put the fruit in pie dish that can go in the oven and on top the meringue. Bring to moderate oven (160. º C) until golden brown. Serve cold or warm.
