GRATINADO DE ABÓBORA E BATATA DOCE / PUMPKIN AND SWEET POTATOE GRATIN

A abóbora que comprei para o jantar de Halloween era enorme e serviu para este gratinado, uma tarte doce e ainda sobrou metade com a qual fiz uns frasquinhos de doce.
Portanto, para compensar a minha falta da semana passada, esta semana teremos 3 receitas com abóbora....
Ingredientes (4 pessoas)
- 400 g de abóbora descascada;
- 2 a 3 batatas doces grandes;
- 4 colheres de sopa de azeite;
- 2 cebolas médias picadas grosseiramente;
- 1 colher de sopa de margarina/manteiga;
- 4 ovos;
- 200 ml de natas (creme de leite);
- 100 g de queijo parmesão e gruyere ralados grosso;
- Sal, pimenta e noz moscada;
Lave bem as batatas com a casca. Algumas batatas doces têm formatos esquisitos e vai ser mais fácil descascá-las desta forma. Numa panela com água e sal, coloque as batatas e a abóbora e deixe ferver cerca de 10 minutos. Escorra e reserve.
Tire a pele às batatas. Corte a abóbora e as batatas em cubos pequenos. Pré-aqueça o forno a 180.º C.
Na panela, aqueça o azeite e refogue a cebola até ficar loirinha com uma pitada de sal. Junte os cubos de abóbora e a batata-doce e deixe refogar cerca de 10 minutos. A meio, coloque um pouco de pimenta. Vá mexendo, para não pegar. Verifique e retifique os temperos.
Coloque o refogado de batata doce e abóbora num recipiente de ir ao forno untado com manteiga. Bata os ovos com a noz moscada, as nata e metade do queijo, uma pitada de sal e pimenta e despeje por cima. Deixe que se introduza na mistura e polvilhe com o resto do queijo. Leve ao forno cerca de 30 minutos.

Ingredients (4 people)
 - 400 g of peeled pumpkin;
 - 2 to 3 large sweet potatoes;
 - 4 tablespoons of olive oil;
 - 2 medium onions, coarsely chopped;
 - 1 tablespoon of margarine / butter;
 - 4 eggs;
 - 200 ml cream;
 - 100 g of grated parmesan and gruyere;
- Salt, pepper and nutmeg;
Wash the potatoes with the skin. Some sweet potatoes have odd shapes and will be easier to peel them this way. In a saucepan with water and salt, place the potatoes and pumpkin and simmer about 10 minutes. Drain and set aside.
Remove the skin of potatoes. Cut the pumpkin and potatoes into small cubes. Preheat oven to 180.º C.
In saucepan, heat olive oil and saute onion until golden with a pinch of salt. Add the diced pumpkin and sweet potato and cook about 10 minutes. Halfway through, add a little peppe and stirr. Check and rectify the seasoning.
Place the sautéed sweet potato and pumpkin in a greased baking container. Beat eggs with nutmeg, cream and half the cheese, a pinch of salt and pepper and pour over the mixture. Sprinkle with remaining cheese. Bake in preheated oven 30 minutes.

TARTE DE ABÓBORA E BATATA DOCE / PUMPKIN AND SWEET POTATOES PIE

Recentemente tivemos a visita de um amigo de São Paulo, Brasil. Sabendo da sua paixão por novas experiências culinárias, o meu cunhado entregou-me meia abóbora e 2 batatas doces enquanto dizia "faz qualquer coisa boa para a sobremesa do jantar de hoje". Depois de muito pesquisar, descobri no blog da Catarina, - Receitas e Sabores do Mundo -, uma receita de tarte de batata doce com um ar fantástico... e com indicação de que também poderia ser feita com abóbora.
Resolvi experimentar fazer uma versão livre da tarte com uma mistura de batata-doce e abóbora. O sabor ficou esplêndido, mas recomendo que a façam no dia anterior para dar tempo de solidificar totalmente e apurar. Esta mal teve tempo de arrefecer (foi comida morna) e a opinião geral foi que a fatia que sobrou estava ainda melhor no dia seguinte... :)!!
Eu fiz a massa da tarte, mas pode usar massa quebrada pré comprada.
Ingredientes da massa: - 225 g farinha; - 110 g manteiga mole; -1 ovo; - 3 colheres água gelada.
Ingredientes Recheio: - 1 batata doce grande; - 250 g de abóbora; - 100g de manteiga; - 2 ovos; - 1 lata de leite evaporado; - 175 g açucar amarelo; - 1/2 Colher de Chá Noz Moscada em Pó; - 1 Colher de Chá de Canela em Pó; - 1 Colher de Chá de mel ou xarope de seiva de ácer.
Lave bem a batata para retirar toda a terra. Retire as sementes à abóbora. Numa panela com água e um pouco de sal, coza a batata e a abóbora com casca. Se usar uma panela de pressão, é mais rápido.
Enquanto a abóbora e a batata doce cozem, prepare a massa da tarte: No processador de alimentos (food processor) junte a farinha com a manteiga. Carregue no botão "pulse" 5 vezes por 5 segundos. Junte o ovo e a água e bata até começar a integrar-se. Retire a massa da máquina, envolva com as mãos e faça uma bola. Embrulhe em papel aderente e coloque no frigorifico por 30 minutos a 1 hora.
Depois de cozidas, escorra bem a abóbora e a batata doce, deixe arrefecer um pouco e retire-lhes a casca e pele, respectivamente. Corte a batata e a abóbora em cubos pequenos e reserve.
Pré-aqueça o forno a 180.º C.
Retire a massa do frigorifico e com um rolo da massa estique-a num formato arredondado, de acordo com a forma onde irá fazer a tarte. Unte a tarteira/forma com manteiga e forre com papel vegetal. Coloque a massa na tarteira.
No processador de alimentos, bata a abóbora e a batata até formar um puré homogéneo. Batendo sempre, acrescente aos poucos e por esta ordem: a manteiga derretida (30 segundos no micro-ondas); o açucar; o leite evaporado; e os ovos um a um. Junte as especiarias e o mel e continue a bater até ficar com um preparado cremoso.
Coloque o preparado na tarteira, alise e leve ao forno cerca de 1 hora.

We recently had a visit from a friend from Sao Paulo, Brazil. Knowing his passion for new culinary experiences, my brother in law gave me half  a pumpkin and 2 sweet potatoes while saying "do something good for dessert today." After much searching, I found in the blog of Catarina - Receitas e Sabores do Mundo (Recipes and Flavors of the World) - a recipe for sweet potato pie that looks fantastic... and indications that could also be made ​​with pumpkin.
I decided to try a free version of the pie with a mixture of sweet potato and pumpkin. The flavor was wonderful, but I recommend do it the day before to allow time to establish and solidify completely. This barely had time to cool  and the general opinion was that the slice that was left was even better the next day ... :)!
I made the pie dough, but you can use pre bought pastry.
Dough Ingredients: - 225 g flour; - 110 g soft butter ; -1 egg; - 3 tablespoons ice water.
Filling Ingredients: - 1 large sweet potato, - 250 g pumpkin, - 100g butter; - 2 eggs; - 1 can of evaporated milk; - 175 g brown sugar; - 1/2 Teaspoon Nutmeg Powder; - 1 Teaspoon Cinnamon Powder; - 1 teaspoon of honey or maple syrup.
Wash potatoes to remove all the earth. Remove the pumpkin seeds. In a saucepan with water and a little salt, bake potatoes and pumpkin. If you use a pressure cooker, it's faster.
While the pumpkin and sweet potato bake, prepare the pie dough: In a food processor combine the flour with the butter. Press the "pulse" 5 times for 5 seconds. Add the egg and water and beat until it begins to integrate. Remove the dough from the machine, wrap with your hands and make a ball.
Wrap in adherent and put in the refrigerator for 30 minutes to 1 hour.
Once cooked, drain well pumpkin and sweet potatoes, let cool slightly and scoop out the shell and skin, respectively. Cut the potatoes and pumpkin into small cubes and set aside.
Preheat oven to 180. º C.
Remove the dough from the refrigerator and with a rolling pin  stretch it into a rounded shape. Grease the tin with butter and line with parchment paper. Place dough in.
In food processor, beat the pumpkin and potato until you have a puree. Still beating, and slowly add in this order: the melted butter (30 seconds in the microwave), the sugar, evaporated milk, and eggs one by one. Add the spices and honey and continue to beat until become creamy.
Place the filling, flatten and bake for about 1 hour.
