MOUSSE DE CHOCOLATE COM CHILI E FRAMBOESAS / CHOCOLATE MOUSSE WITH CHILLI AND RASPBERRYS

Hoje os meus pais fizeram anos de casados. Para comemorar a data, fiz uma mousse de chocolate com um toque diferente.... Afinal, na culinária ou num casamento uma mistura equilibrada de doce, ácido e picante pode tornar tudo mais apetecível!
Ingredientes (4 taças individuais):
- 250 g de chocolate preto, com 70% cacau;
- 3 ovos;
- 2 colheres de sopa cheias de açúcar amarelo;
- 1 chili vermelho, bem picado;
- 2 colheres de sopa de rum;
- 250 ml de natas;
- 100 g framboesas;

Coloque o chocolate preto numa tigela refratária suspensa sobre uma panela com água fervente, até derreter. Depois de derretido, deixe arrefecer sem endurecer.
Separe as gemas das claras. Esmagar 30 g de framboesas.
Numa tigela bata bem as gemas com o açucar até ficarem pálidas. Juntar o chocolate, o rum, as framboesas esmagadas e o chili picado e bater bem.
À parte, bata as claras em castelo (neve). Bata as natas até engrossarem. Na mistura de chocolate, envolva cuidadosamente as natas batidas e as claras em castelo sem bater.

Coloque em taças individuais, enfeite com as restantes framboesas inteiras e leve ao frigorifico por cerca de 3 horas antes de servir.

Today is the wedding anniversary of my parents. To commemorate the date, I made a chocolate mousse with a twist .... After all, whether in cooking or in a marriage a balanced mix of sweet, sour and spicy can make it more desirable!
Ingredients (4 individual bowls):
- 250 g of dark chocolate with 70% cocoa;
- 3 eggs;
- 2 heaped tablespoons of brown sugar;
- 1 red chili pepper, finely chopped;
- 2 tablespoons rum;
- 250 ml double cream;
- 100 g raspberries;
Place the chocolate in a heatproof bowl suspended over a saucepan of simmering water until melted. Once melted, let it cool without hardening.
Separate the yolks from the whites. Crush 30 g raspberries.
In a whisking bowl, beat together the egg yolks and sugar until thick and pale.
Add chocolate, rum, crushed raspberries and chopped chili and beat well.
Separately, whip the egg whites into stiff peaks. Whip the cream until swell.
In the chocolate mixture, wrap carefully the whipped cream and egg whites, folding.
Place in individual bowls, garnish with the remaining whole raspberries and bring to the fridge for about 3 hours before serving.

FRANGO DA JAMAICA / JAMAICAN CHICKEN

Cá em casa preferem aves e como já devem ter percebido pelo nome do blog, eu gosto de especiarias... Este prato resulta dessa mistura de interesses e gostos! Espero que apreciem.
Ingredientes (4 pessoas):
-  1 frango;
-  1 malagueta vermelha;
- sal e pimenta;
- 6 dentes de alho;
- 2 colheres de sopa de gengibre ralado;
- 2 colheres de sopa de açucar mascavado;
- 60 g de mostarda;
- 1 colher de chá de canela moída;
- 100 ml de azeite;
- 2 cebolas em rodelas;
- 60 ml. de vinagre de sidra;
- 2 colheres de sumo de lima;
Num pilão ou num processador de alimentos esmague a malagueta (sem sementes), os alhos, gengibre, açucar, mostarda, canela, azeite, cebolas, vinagre e sumo de lima. Bata até obter uma pasta homogénea. Acrescente sal e pimenta e volte a bater.
Separe as pernas das coxas do frango. Corte os peitos em duas partes transversalmente, deixando as asas agarradas. Esfregar bem o frango com a mistura e deixar marinar por 2 horas.
O frango deve ser feito em calor moderado e pode ser grelhado em carvão (40 minutos), grelhador (40 minutos) ou colocado no forno. Neste último caso, pré- aqueça o forno a 200.º C e ponha um tabuleiro na parte mais baixa do forno com um pouco de água no fundo. Coloque o frango na grelha do forno a meio do forno e baixe a temperatura para 170.ºC. Está pronto em cerca de 25-30 minutos, dependendo do forno.

Here at home the preference goes for poultry and, as you may noticed by blog's name, I like spices... This dish results from this mix of interests and tastes! I hope you enjoy.
- 1 chicken;
- 1 red chilli;
- Salt and pepper;
- 6 cloves of garlic;
- 2 tablespoons grated ginger;
- 2 tablespoons brown sugar;
- 60 g of mustard;
- 1 teaspoon ground cinnamon;
- 100 ml olive oil;
- 2 onions, sliced​​;
- 60 ml. apple cider vinegar;
- 2 tablespoons lime juice;
In a pestle or a food processor to crush the chili (without seeds), garlic, ginger, sugar, mustard, cinnamon, olive oil, onions, vinegar and lime juice. Beat until a smooth paste. Add salt and pepper and beat again.
Separate the legs of the chicken thighs. Cut the breasts into two parts across, leaving the wings stuck. Rub the chicken with the mixture and allow to marinate for 2 hours.
The chicken should be done at moderate heat and can be grilled on charcoal (40 minutes),  grill (40 minutes) or placed in the oven. In the latter case, pre-heat oven to 200.° C and put on a tray at the bottom of the oven with a little water on it. Place the chicken on a grill in the middle of the oven and lower oven temperature to 170.° C. Is ready about 25-30 minutes  after, depending on the oven.
